Sausage!!

Have you ever made your own sausage?  On this Mark's Daily Apple link, there is a recipe and instructions for making your own sausage.  Since I don't have a meat grinder I looked for some ground pork, which I found at BJ's.
So I made sausage.  It came out tasting really good!  I impressed myself!

Homemade Sausage
  • 2 lbs. ground pork
  • 2 teaspoons ground sage
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper, I used freshly cracked mixed peppercorns
  • 2 teaspoons fennel seeds
  • 1 teaspoon brown sugar - a little won't hurt!
  • 1 teaspoon red peppers flakes
  • 1 teaspoon dried chives
  • 1/2 teaspoon paprika
Mix well. (I used my best tools - my hands).  Form into patties. Enjoy!!
